How to differentiate between high-res phone and desktop using css or js or anything else?

I'm trying to load different sites on phone and desktop by using media query of type @media screen and (max-width:800px). The problem is that some of the mobile phones these days have 1080px width or more and some desktop monitors still have at most 1024 resolution. So, Its doesn't seems possible to differentiate on basis of max-width media query only. How can I do that? I have seen such thing working at http://le-mugs.com/. This site opens the Desktop or Mobile site accordingly, while being independent of device or browser window resolution.

You can detect if client is using mobile with this (one-liner) code in javascript:
